Pollo en Tamarindo From Merida Yucatan


Pollo en Tamarindo (Tamarind Chicken)

Serves 6 people

12 Anchos Chiles
-roasted over fire on range
-pull out stem + core
-de-seed and place in boiling water until skin peels over -strain out water and put in blender

In Blender
-Add 10 bay leaves (dry)
-1 t cumin
-1/2 t cloves
-2 or 3 garlic cloves
-1 T black pepper
-15 tamarind pods, boiled until soft and de-shelled w/no seeds. -1 stick cinnamon
-blend Chicken
-boil and shred chicken breasts

-add a little oil to cover bottom of medium sauce pan
-add blender contents and chicken
-heat contents

Serve with hot tortillas, ideally fresh. A great dish that is uniquely from Mexico.
